
Pineapple Rice

Ingredients
Serves 4
- 1 tbsp Unsalted butter
- 1 each Garlic cloves, finely chopped
- 14 1/2 oz Reduced sodium chicken broth
- 8 oz diced pineapple, canned or fresh (including any juice to pan)
- 1/8 tsp Kosher salt
- 1/8 tsp Ground black pepper
- 1 1/4 cup(s) Long grain rice
Instructions
- Melt butter in a 2 quart saucepan over medium-high heat.
- Saute garlic for 1 minute.
- Add broth, pineapple with juice, salt and pepper.
- Stir and bring to a boil.
- Add rice and cover tightly.
- Reduce heat to low and simmer 20 minutes or until liquid is absorbed.
- Fluff with a fork and serve.
- Garnish with finely chopped green onions if desired.
