  • 5 Dried chile chipotle, approximately 1/2 oz.
  • 2 tsp Cumin seed
  • 1 tsp Whole caraway seeds
  • 6 Peeled garlic cloves
  • 1/2 tbsp Paprika
  • 1/4 cup Fresh lemon juice
  • 1/3 cup Sunflower Oil

Instructions

  1. In a small bowl, add dried chilies and completely cover with boiling water. Cover with plastic wrap and set aside for 45 minutes to soften.
  2. While peppers are steeping, add cumin and caraway seeds to a small pan and toast over low heat until fragrant and just slightly darkened in color.
  3. Using a spice grinder, blender, or mortar and pestle, grind toasted seeds into a powder and set aside.
  4. Once peppers are soft, drain liquid reserving 1/4 cup of soaking liquid. Add peppers, reserved soaking water, garlic, powdered cumin and caraway, paprika, lemon juice, and oil to a blender and blend until smooth.
  5. Season to taste with salt and pepper and place in an airtight container. Refrigerate for up to a week.
  6. Chef's Note: Use Pilpelchuma on everything from eggs, veggies or any proteins.
