Unsaved Philly Style Chicken Cheesesteak Lettuce Wraps

Ingredients

  • 1 3/4 lb Thin sliced chicken breast, cut into thin strips or diced
  • 2 tsp Garlic powder
  • 2 tsp Onion powder
  • 1 1/2 tsp Chili powder
  • 1/4 cup Avocado oil, or any neutral flavored oil
  • 3 Red and yellow bell peppers, approximately 3, cut into thin strips
  • 1 Large yellow onion, julienned or thinly sliced, approximately 2 cups sliced
  • 4 oz Sliced provolone cheese, approximately 5 to 6 slices, plus more as needed for coverage
  • 1 Living butter lettuce, 1 head, leaves gently separated and any dirt brushed off

Instructions

  1. In a glass or plastic bowl combine chicken with garlic powder, onion powder, chili powder and a pinch of salt and pepper.
  2. Set a large cast iron pan or large sauté pan over medium heat and preheat for at least 15 minutes or while chicken is marinating.
  3. Add oil to pan along with marinated chicken and stir-fry for 8 to 12 minutes or until chicken is nicely browned.
  4. Preheat oven to 350ºF. Using a slotted spoon, remove chicken to an oven-safe casserole dish and let rest.
  5. Add peppers and onions to hot pan along with a pinch of salt and pepper. Stir-fry veggies and scrape up any browned bits from chicken while cooking. Cook until veggies are nicely browned and caramelized.
  6. Once veggies are caramelized, remove from heat and spread peppers evenly over chicken.
  7. Place slices of provolone cheese over chicken and peppers to just cover. Bake for 10 to 12 minutes or until cheese melts.
  8. Allow to cool slightly before serving in individual lettuce leaves. Season to taste as needed.
