
Peanut Brittle

Ingredients
Serves 10
- 3 cup(s) granulated sugar
- 1 1/2 cup(s) light corn syrup
- 1 cup(s) water
- 3 tbsp unsalted butter
- 16 oz raw Spanish peanuts
- 2 tsp vanilla extract
- 1 tsp salt
- 2 tbsp baking soda
Instructions
- Spray a rimmed baking sheet with non-stick spray.
- Place sugar, corn syrup, and water in a large heavy bottom pot. Attach a candy thermometer to the side making sure bulb is not touching bottom of the pot.
- Heat mixture over medium-high heat until it's boiling and bring to 275ºF on the thermometer.
- Add butter. When melted, add peanuts and stir. Turn heat down to low and cook until mixture reaches 290ºF. Turn off heat.
- Add vanilla, salt, and baking soda. Stir until incorporated and color of mixtures lightens.
- Immediately pour onto prepared baking sheet, tilting pan so brittle reaches edges of pan. Set aside to cool completely.
- Once set, use a hammer or heavy spoon to crack into snack-size pieces. Store in an airtight container at room temperature for up to 2 weeks.
