
Pasta e Fagioli- "Pasta Fazool"

Serves 8
Ingredients
- 1 cup Bacon, diced
- 1 cup White onion diced
- 1/2 cup Carrot(s), diced
- 2 tbsp Fresh garlic clove(s), minced
- 2 cans Cannellini beans, rinsed & drained
- 1 can Crushed tomatoes
- 6 cups Veggie stock
- 1 tbsp Fresh rosemary, chopped
- 1 tsp Kosher salt
- 1 Central Market Vesuvio Pasta di Gragnano
Instructions
- Set a large pot on medium heat, add bacon and stir-fry 5-6 minutes.
- Add onions, carrots and garlic. Continue to stir-fry until bacon is just crispy and veggies have some color.
- Add cannellini beans, stir to soak up some of the bacon fat, and cook 2-3 minutes.
- Stir in crushed tomatoes, veggie stock, rosemary and salt. Bring to a simmer and cook 20 minutes.
- Meanwhile, cook pasta according to package instructions, drain and set aside.
- To serve: top cooked pasta with some of the bean sauce. Season to taste and enjoy.
