Unsaved Pasta e Fagioli- "Pasta Fazool"

Ingredients

  • 1 cup Bacon, diced
  • 1 cup White onion diced
  • 1/2 cup Carrot(s), diced
  • 2 tbsp Fresh garlic clove(s), minced
  • 2 cans Cannellini beans, rinsed & drained
  • 1 can Crushed tomatoes
  • 6 cups Veggie stock
  • 1 tbsp Fresh rosemary, chopped
  • 1 tsp Kosher salt
  • 1 Central Market Vesuvio Pasta di Gragnano

Instructions

  1. Set a large pot on medium heat, add bacon and stir-fry 5-6 minutes.
  2. Add onions, carrots and garlic. Continue to stir-fry until bacon is just crispy and veggies have some color.
  3. Add cannellini beans, stir to soak up some of the bacon fat, and cook 2-3 minutes.
  4. Stir in crushed tomatoes, veggie stock, rosemary and salt. Bring to a simmer and cook 20 minutes.
  5. Meanwhile, cook pasta according to package instructions, drain and set aside.
  6. To serve: top cooked pasta with some of the bean sauce. Season to taste and enjoy.
