  • 1 1/2 lb monkfish
  • 1 medium lemon, one half cut into slices for garnish
  • 1 tbsp For Real Butcher's BFF, Buttery Garlic Shallot, (or all-purpose seasoning of your choice)
  • 2 tbsp olive oil
  • 1 tbsp salted butter
  • 1/2 cup(s) red onion, very thinly sliced
  • 1 cup(s) angel sweet tomatoes, cut in half
  • 1/2 cup(s) sliced kalamata olives
  • 1 cup(s) Ashman House Seafood Sauce, Lemon Dill Flavor
  • 1/4 cup(s) fresh parsley, leaves only, finely chopped

Instructions

  1. Preheat oven to 375°F. Rinse fish gently under cool running water. Pat dry with a paper towel.
  2. Squeeze the juice of half a lemon over both sides of the fish and season generously on one side with Butcher's BFF seasoning.
  3. Heat a medium-sized skillet over medium heat. Add olive oil to the pan. Place fish in the pan, seasoned side up. Cook 4 to 5 minutes or until fish starts to turn brown on the edges.
  4. Gently flip the fish over and add butter, red onions, tomatoes, and olives to the pan. Nestle the fish on top of the onion mixture. Top with lemon dill sauce and place in the preheated oven.
  5. Cook for 7 to 9 minutes or until the internal temperature reaches 130°F in the thickest part of the fish. Remove from the oven and garnish with fresh parsley and remaining lemon slices.
