
Pan Roasted Chicken with Champagne Mustard Sauce

- 1 tbsp garlic and herb sunflower oil
- 14 oz boneless skinless chicken breasts, approximately (2) 7 oz. breasts
- 1/4 cup(s) shallots, minced or chopped very fine
- 1 tbsp Dijon mustard
- 1/4 cup(s) champagne vinegar
- 1/4 cup(s) water
- 1 tbsp fresh thyme, leaves only, roughly chopped
Instructions
- Set a large sauté pan over medium-high heat. Add oil and allow to get hot. Meanwhile, season chicken with a pinch of salt and pepper.
- Add chicken to hot pan and cook until nicely browned. Flip and continue cooking until chicken has an internal temperature of at least 165ºF. Transfer to a serving plate to rest.
- Turn heat down to medium. In the same pan, add shallots, mustard, vinegar, water and thyme. Using a wooden spoon or spatula, scrape up any brown bits on bottom of pan.
- Bring sauce to a simmer, stir to emulsify, and season to taste. Spoon a little of the hot sauce over each chicken breast and serve.
- Chef's Note: Serve over rice or on top of a salad for a complete meal.
