Unsaved Pan Roasted Chicken with Champagne Mustard Sauce

Ingredients

  • 1 tbsp Garlic and herb sunflower oil
  • 14 oz Boneless skinless chicken breasts, approximately (2) 7 oz. breasts
  • 1/4 cup Shallots, minced or chopped very fine
  • 1 tbsp Dijon mustard
  • 1/4 cup Champagne vinegar
  • 1/4 cup Water
  • 1 tbsp Fresh thyme, leaves only, roughly chopped

Instructions

  1. Set a large sauté pan over medium-high heat. Add oil and allow to get hot. Meanwhile, season chicken with a pinch of salt and pepper.
  2. Add chicken to hot pan and cook until nicely browned. Flip and continue cooking until chicken has an internal temperature of at least 165ºF. Transfer to a serving plate to rest.
  3. Set a large sauté pan over medium high heat. Season chicken with a pinch of salt and pepper then add oil to pan and allow to get hot before adding chicken.
  4. Turn heat down to medium. Add shallots, mustard, vinegar, water and thyme and use a wooden spoon or spatula to scrape up any brown bits on bottom of pan.
  5. Allow chicken to get nicely browned before turning over. Continue cooking until salmon reaches at least 145F internal temp.

  7. Bring sauce to a simmer, stir to emulsify, and season to taste. Spoon a little of the hot sauce over each chicken breast.
  8. Remove chicken from pan allow to rest onto a plate turn heat down to medium low and add shallots, vinegar, mustard, water and thyme to pan. Season to taste as needed and garnish with fresh herbs if desired.
  9. Chef's Note: Serve over rice or on top of a salad for a complete meal.
  10. Chef's Note: Refrigerate any leftover vinaigrette for up to 3 days in refrigerator.
