
One Pot Texas Ranch Chicken Chili

- 2 tbsp olive oil, divided use
- 8 oz mushrooms, thinly sliced
- 1 small red onion, finely chopped
- 1 lb ground chicken breast
- 8 oz sour cream
- 32 1/2 oz Texas Ranch Casserole Mix
- 15 oz cannellini beans
- 1/4 cup(s) fresh cilantro, finely chopped
Instructions
- Heat a large pan over medium-high heat. Add half of oil, mushrooms and onions to pan. Stir and cook about 5 to 6 minutes or until mushrooms start to lightly brown and onions soften.
- Add remaining oil and chicken to pan, and cook for 7 to 8 minutes, breaking chicken apart as it cooks, until meat is thoroughly cooked.
- Add sour cream and stir through to combine. Add Texas ranch casserole mix, beans (if using), and cilantro. Stir to combine. Heat through just to a gentle simmer.
- Serve warm and garnish with shredded cheese, tortilla strips and additional cilantro, if desired.
