
One Pot Cheeseburger Mac and Cheese

- 1/4 cup(s) olive oil, divided use
- 1 1/2 cup(s) red onion, finely diced
- 1 1/2 tsp smoked paprika
- 1 tsp salt
- 1 lb ground beef
- 1 tbsp fresh garlic, chopped or minced
- 1 tbsp Dijon mustard
- 32 oz chicken stock
- 1 cup(s) whole milk
- 10 oz dry elbow pasta
- 8 oz cream cheese
- 8 oz shredded sharp cheddar cheese
- 1/4 cup(s) parmesan cheese
- 2 each roma tomatoes, seeded and chopped
- 1 1/2 cup(s) panko bread crumbs
Instructions
- Heat oven to 400°F. Heat a large, oven-safe pot over medium-high heat. Add half of the olive oil, red onion, smoked paprika, and salt. Stir and cook for about 5 minutes, or until the onions start to soften.
- Add the ground beef to the pan. Stir and cook for another 5 minutes, or until the meat breaks apart and cooks all the way through. Add the garlic and Dijon mustard and stir through the meat.
- Add stock and milk and bring to a simmer. Add pasta and cook about 10 minutes, or until pasta is tender, but not mushy.
- Remove from heat and add the cream cheese, shredded sharp cheddar cheese, Parmesan cheese, and chopped roma tomatoes. Stir to combine and melt the cheese
- Add the panko bread crumbs to a small bowl and stir through the remaining olive oil to coat the bread crumbs. Sprinkle a layer of bread crumbs on top of the macaroni and cheese. Place the pot in the oven and cook for 8 to 10 minutes, or until the bread crumbs are lightly browned.
- Optional: Serve with chopped dill pickles on top.
