
One Pan Green Chili Chicken Pot Pie

- 1 tbsp olive oil
- 1 small white onion, (or about 1 cup) finely chopped
- 2 medium stalks of celery, (or about 1/2 cup) finely chopped
- 12 oz frozen mixed vegetables
- 12 oz frozen, fully cooked chicken fajita meat, roughly chopped to bite sized pieces
- 10 oz Fischer & Wieser Four Star Provisions Roasted Chile Verde Pan Sauce
- 10 1/2 oz chicken queso blanco condensed soup, (or substitute cream of poblano or cream or jalapeño soup)
- 1 cup(s) fresh cilantro, stemmed and finely chopped
- 1 each refrigerated pie crust
Instructions
- Preheat oven to 375ºF. Heat a large, oven-safe skillet over medium-high heat. Add oil, onions and celery to skillet. Stir and cook until onions start to soften.
- Add frozen vegetables, fajita meat, chili verde sauce, condensed soup and cilantro to pan. Stir to combine and heat through just until starting to bubble.
- Top with 1 sheet of refrigerated pie crust. Cut several slits in pie crust and place in oven. Bake 14 to 16 minutes or until crust is golden brown.
