
Oaxacan Mushroom and Poblano Quesadillas

Ingredients
- 2 cups Queso Oaxaca cheese
- 1 Large poblano pepper, stem, seeds, and ribs removed and julienned.
- 1/2 Medium yellow onion, julienned
- 8 oz Sliced mushrooms
- 1 1/2 tsp Mi Tienda All Purpose Seasoning
- 3 tbsp Olive oil
- 8 Corn tortillas
Instructions
- Heat a 2 tablespoons of oil over medium-high heat in a large skillet. Add julienned peppers, mushrooms, and onions. Sauté for 5 to 6 minutes until softened. Sprinkle with all purpose seasoning then remove to a bowl and reserve.
- For each quesadilla, spread a thin layer of Oaxaca cheese evenly over a tortilla, followed by the pepper, onion, and mushroom mixture. Add another tortilla on top and press together.
- Return pan to heat and add 1 teaspoon of oil. Add 2 quesadillas and cook 3 to 4 minutes per side or until cheese is just melted and quesadilla is slightly crispy on each side. Repeat with remaining quesadillas.
- Cut into quarters and serve with sour cream, salsa, or sliced avocado if desired.
