
Oat Flour Crepes

Ingredients
Serves 4
- 4 large eggs
- 1/4 cup(s) Higher Harvest by H‑E‑B Dairy Free Almond-Based Yogurt – Vanilla
- 1 cup(s) Higher Harvest by H‑E‑B Gluten Free Oat Flour
- 1 tsp baking soda
- 1/4 cup(s) Higher Harvest by H‑E‑B Non-Dairy Unsweetened Vanilla Almond Milk
- 1 tbsp raw honey
Instructions
- Add eggs, yogurt, oat flour, salt, baking soda, almond milk and honey to a mixing bowl. Whisk together until smooth.
- Heat a small, non-stick skillet over medium heat. Add a small amount of butter or spray oil to skillet, just to lightly coat.
- Add about 1/2 cup crepe batter to heated skillet and immediately swirl to a thin coat to cook on 1 side for 1 minute or until top surface starts to bubble and get less shiny. Gently flip crepe onto second side and cook for 30 seconds longer.
- Tip crepe onto a plate and repeat with remaining batter. Fill with fresh fruit of choice.
- Chef's note: delicious topped with whipped cream or whipped topping if desired.
