  • 14 11/13 oz H‑E‑B The Mint-Night Rodeo Cookie, roughly crushed by hand
  • 1/4 cup(s) salted butter, melted
  • 1/4 oz unflavored gelatin, 1 packet
  • 1/4 cup(s) cold water
  • 16 oz cream cheese, brought to room temp
  • 1 1/4 cup(s) granulated sugar
  • 1 cup(s) sour cream, full fat
  • 1 cup(s) heavy whipping cream
  • 1 tsp fine sea salt, if using iodized salt use only 1/4 tsp
  • 1 tbsp vanilla bean paste

Instructions

  1. Place cookies and melted butter In a food processor. Pulse to form a sand-like consistency. Pour into a 9x13" casserole dish and press to form an even crust.
  2. In a small microwave-safe bowl combine gelatin and water. Mix quickly to dissolve all powder. Set aside and allow to fully set. Cover and refrigerate for at least 30 minutes to allow crust to firmly set up.
  3. In a stand mixer with whip attachment, add cream cheese and sugar. Beat until smooth and creamy.
  4. Add sour cream, heavy cream, salt and vanilla bean paste. Beat for about 1 minute. While mixture is beating, microwave gelatin for approximately 15 seconds or until it turns back into a liquid.
  5. Immediately add gelatin to mixer and turn mixer speed up slightly. Mix until cream has reached medium peaks.
  6. Using a spatula, pour cheesecake mixture evenly over set cookie crust. Cover with plastic wrap and refrigerate for at least 8 hours or until cheesecake has fully set.
  7. Cut and serve, garnish with whipped cream and cookie pieces if desired.
