
Nectarine and Melon with Lime Yogurt and Toasted Coconut

Ingredients
- 2 cups Greek Yogurt
- 2 tsp Vanilla Bean Paste, or 1 tsp vanilla extract
- 3 tbsp Honey, plus more as needed for sweetness
- 3 Medium limes, about 1 to 2 tsp lime zest, and 3 tbsp. lime juice
- 1/8 tsp Fine Crystals Mediterranean Sea Salt
- 4 Nectarines, seeds removed and diced
- 1 lb Dream Melon, diced or scooped out with a melon baller, approximately 4 cups
- 1/4 cup Fresh Mint, julienned or chiffonade
- 1/2 cup Toasted Flake Coconut, as needed for garnishing
Instructions
- Add yogurt, vanilla, honey, lime zest, and salt in a bowl, and whisk to combine.
- Cover and refrigerate for at least 30 minutes to allow flavors to set up.
- While yogurt is marinating, combine nectarines, melon, mint, and lime juice in a bowl, and toss to coat. Set aside or cover and refrigerate for later use.
- To serve, add fruit to each bowl, top with yogurt, and garnish with toasted coconut.
- Chef's Note: Adding granola to this is a great way to make it a more filling breakfast or brunch.
