
Mushroom-Shallot Gravy

Ingredients
- 4 oz Unsalted butter
- 4 Medium shallot, finely chopped
- 8 oz Mushrooms, sliced
- 1/2 cup Unbleached all purpose flour
- 4 cups Reduced Sodium Chicken Broth
- 1 tsp Rubbed sage
- 1 tsp Thyme
Instructions
- Melt butter in a large skillet over medium-high heat.
- Sauté shallots and mushrooms until soft; then, add the flour.
- Cook 2-4 minutes stirring constantly to avoid burning the flour.
- Add the chicken broth and whisk vigorously to avoid lumps.
- Add herbs and reduce heat to low.
- Whisk and serve immediately.
