Unsaved Mummy Wrapped Meatloaf

Ingredients

  • 1 tbsp extra virgin olive oil
  • 7 oz diced bell pepper and onions, 1 container
  • 2 lb ground beef, 85-15 or 80-20 works best
  • 1 1/2 oz meatloaf seasoning, 1 packet
  • 1/2 cup(s) panko breadcrumbs
  • 3 large eggs, divided use
  • 1/2 cup(s) black pepper ketchup, or regular ketchup if preferred. Plus more as needed for serving if desired
  • 1/2 cup(s) cold water, plus 2 tbsp for egg wash
  • 1 each 1 sheet of puff pastry, rolled out into a rectangle, lightly dusted with flour, cut horizontally into 18 to 20 (1/2 inch) strips
  • 2 each pimento stuffed olives, or as needed for eyes

Instructions

  1. Set a sauté pan over medium heat, add oil and allow to get hot. Sauté peppers and onions with a pinch of salt and pepper until just starting to brown. Set aside to cool.
  2. In a large bowl, combine ground beef, seasoning packet, panko, 2 eggs, ketchup, cold water, and pepper onion mixture. Mix well.
  3. Cover bowl and refrigerate. Preheat oven to 350ºF while meat is resting.
  4. On a sheet pan lined with parchment paper, lay puff pastry strips horizontally across pan from top to bottom. Strips will be your mummy wrappings.
  5. Place meatloaf in center of sheet pan over strips of puff pastry. Form into a coffin shape or a bowling pin shaping neck and head.
  6. Wrap strips of puff pastry around meatloaf and tuck in or fold-back any edges. Continue to wrap puff pastry until fully covered, leaving an open area across the eyes. Use pimento stuffed olives as eyes.
  7. Whisk remaining egg and 2 tbsp. water together and brush entire puff pastry with egg wash.
  8. Bake 45 to 50 minutes or until meatloaf's internal temperature reaches at least 165ºF and puff pastry is golden brown.
  9. Rest for at least 20 minutes before cutting and serving.
  10. Chef's Note: You can form mummy into any body shape desired and even give it legs.
