
Moroccan Style Carrot Salad with Seeds

Ingredients
Serves 6
- 1/4 cup(s) fresh lemon juice
- 1 1/2 tsp ground cumin
- 1 1/2 tsp Ground coriander
- 1 tsp Smoked paprika
- 3 each peeled garlic cloves, approximately .25 to .35 ounces
- 1/2 cup(s) extra virgin olive oil
- 20 oz Julienned carrots
- 1/3 cup(s) fresh mint, finely chopped
- 1/3 cup(s) fresh cilantro, finely chopped
- 1/3 cup(s) Fresh parsley, finely chopped
- 1/4 cup(s) fresh dill, finely chopped
- 2 tbsp toasted sesame seeds, plus more as needed
Instructions
- In a blender combine lemon juice, cumin, coriander, smoked paprika, garlic and olive oil. Puree until well combined and smooth. Season to taste and set aside.
- In a large salad bowl add carrots, mint, cilantro, parsley, dill and toasted sesame seeds. Toss everything to evenly combine.
- Add dressing to salad and toss well to coat. Season to taste and top with more sesame seeds if desired.
- Cover with plastic wrap, refrigerate and allow to sit for at least 30 minutes to allow flavors to meld.
- Chef's Note: Add diced jalapeños or serrano peppers to salad for extra spice and flavor if desired.
