Moroccan Roasted Cauliflower

Unsaved Moroccan Roasted Cauliflower

Ingredients

  • 16 oz Organic cauliflower florets
  • 1/4 cup Garlic and herb sunflower oil
  • 2 tsp Ground cumin
  • 2 tsp Ground coriander
  • 1 tsp Garlic powder
  • 1 tsp Smoked paprika
  • 1/4 cup Fresh cilantro, chopped fine
  • 1/4 cup Fresh mint, roughly chopped
  • 1/4 cup Fresh squeezed lemon juice

Instructions

  1. Preheat oven to 425ºF.
  2. In a large bowl combine cauliflower with oil, cumin, coriander, garlic powder, smoked paprika and a pinch of salt and pepper.
  3. Toss well to coat then place on a roasting pan and cook for 15 to 20 minutes or until cauliflower is just soft and slightly browned.
  4. While still hot, add cauliflower to a serving bowl and immediately add cilantro, mint and lemon juice.
  5. Toss to coat, season to taste as needed, and serve immediately.
