Unsaved Moroccan Roasted Cauliflower

Ingredients

  • 16 oz organic cauliflower florets
  • 1/4 cup(s) garlic and herb sunflower oil
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/4 cup(s) fresh cilantro, chopped fine
  • 1/4 cup(s) fresh mint, roughly chopped
  • 1/4 cup(s) fresh squeezed lemon juice

Instructions

  1. Preheat oven to 425ºF.
  2. In a large bowl combine cauliflower with oil, cumin, coriander, garlic powder, smoked paprika and a pinch of salt and pepper.
  3. Toss well to coat then place on a roasting pan and bake for 15 to 20 minutes or until cauliflower is just soft and slightly browned.
  4. While still hot, add cauliflower to a serving bowl and immediately add cilantro, mint and lemon juice.
  5. Toss to coat, season to taste as needed, and serve immediately.
