Ingredients

  • 14 11/13 oz H‑E‑B The Mint-Night Rodeo Cookies, approximately 12 cookies for soaking in half and half and remaining cookies crumbled up for dirt topping
  • 4 cup(s) heavy whipping cream, divided use, 2 cups for soaking cookies and 2 cups for whipping cream.
  • 1 cup(s) half and half`
  • 5 1/10 oz instant vanilla pudding mix
  • 1/3 cup(s) powdered sugar
  • 2 tsp vanilla extract
  • 7 oz gummi worms, as needed for garnishing

Instructions

  1. Place cookies in a quart size or larger container. Pour two cups of heavy cream and all of the half & half over the cookies.
  2. Make sure cookies are completely submerged in cream. Cover with a lid and refrigerate for at least 1 hour to allow cookies to soften.
  3. In a bowl combine soaked cookies, all the cream and pudding mix. Gently mash up cookies then whip pudding with a hand mixer until smooth and soft peaks form. *It's ok if some larger cookie pieces still remain in the pudding.
  4. Split pudding evenly between approximately 8 ramekins. Make whipped cream by whipping heavy cream, sugar and vanilla in a bowl until still peaks form.
  5. Top each ramekin with whipped cream and add crumbled cookies on top. Refrigerate for at least 2 hours to allow pudding to set up. Garnish with a few gummy worms before serving.
