Mediterranean Stuffed Peppers

Unsaved Mediterranean Stuffed Peppers

Ingredients

  • 1 tbsp Extra Virgin Olive Oil
  • 8 oz Natural ground beef
  • 7.1 oz Frozen cauli rice, Mediterranean flavor
  • 6 oz Mild Pico de Gallo
  • 10 Kalamata olives, quartered
  • 2 Medium red bell peppers
  • 3 oz Feta cheese, crumbled

Instructions

  1. Preheat oven to 375°F.
  2. Heat a sauce pan over medium high heat. Add oil and beef to pan. Stir and cook until beef is thoroughly cooked and well browned, about 8 minutes.
  3. Remove pan from heat and add cauli rice, pico de gallo and olives to pan. Stir well and set aside.
  4. Wash bell peppers. Cut top off about 1/2 inch below base of stem. Remove seeds and membranes carefully from inside.
  5. Mix half of feta cheese through beef/cauliflower mixture and stuff gently into peppers. Top with remaining feta and place in an oven safe dish.
  6. Cook for 20 to 22 minutes, or until pepper is tender-firm. Remove from pan and serve.
