Ingredients
Serves 4
- 1 tbsp olive oil
- 1 lb ground turkey
- 1 cup(s) white onion, finely chopped
- 1 tbsp Adams Reserve Mediterranean House All Purpose Rub, (or Italian herb blend of your choice)
- 1 each 15.5 oz can CM Organic Garbanzo Beans
- 2 medium roma tomatoes, diced
- 1/3 cup(s) sliced kalamata olives
- 1 cup(s) seedless cucumber, small dice
- 2 tbsp fresh basil leaves, very finely chopped
- 1/3 cup(s) H‑E‑B Organics Tuscan Style Italian Dressing
- 5 oz baby spinach
- 1 oz crumbled feta
Instructions
- Heat a large skillet over medium-high heat. Add the olive oil and ground turkey. Break apart the chunks and cook for 4 to 5 minutes.Add the onions and seasoning to the skillet. Use additional olive oil if needed. Stir and cook for about 5 more minutes, or until the onions soften and the turkey browns around the edges.
- In a small bowls mix together garbanzo beans, tomatoes, kalamata olives, cucumbers, basil and vinaigrette. Stir to combine.
- Divide spinach, cooked turkey and garbanzo mixture between the 4 serving bowls. Top with crumbled feta and serve.
