- 2 each fresh mango, peeled and sliced
- 1 cup(s) avocado, diced
- 1/4 cup(s) Cotija cheese, crumbled
- 1/4 cup(s) pepitas, roasted
- 1/4 cup(s) green onion, chopped
- 2 large sweet corn, roasted and kernels removed from cob
- 1/3 cup(s) Habanero and Aji Amarillo Sauce
- 1 tbsp lime, juice
- 1/3 cup(s) olive oil
- 1/2 cup(s) fresh cilantro, chopped
- 1 medium butterhead lettuce, torn or roughly chopped
Instructions
- Place mangoes, avocado, Cotija cheese, pepitas, green onions and roasted corn kernels in a large bowl. Set aside.
- In a blender combine Habanero & Aji Amarillo Sauce, lime juice, olive oil and cilantro. Blend until emulsified.
- Pour dressing over mango mixture and mix well. Serve over mixed greens or Bibb lettuce.
