
Make Ahead Breakfast Sandwich

- 6 each English muffins, cut in half
- 3 tbsp Sweet cream salted butter
- 8 large Eggs, beaten
- 1/4 cup(s) Half & half
- 6 each Sliced cheddar cheese, cut into quarters
- 6 oz Sliced Canadian bacon, cut in half
Instructions
- Preheat oven to 350ºF. Grease a 2.7 quart baking pan (7x11) and set aside.
- Arrange halved English muffins on a sheet pan and spread butter on each half. Place in oven to toast for 5 to 6 minutes.
- Meanwhile, combine eggs and half & half in a bowl and season with salt and pepper. Whisk until well combined. Transfer to prepared pan and bake for 10 to 12 minutes.
- While eggs cook, place 2 cheese quarters on each muffin half followed by a slice of Canadian bacon. Set aside.
- Once eggs are cool enough to handle, cut into 6 equal squares and place on half of the muffins. Top with remaining muffin halves and enjoy.
- Cool remaining sandwiches for 10 minutes, wrap in parchment and store in the English muffin tray for up to 4 days in the fridge. To reheat, wrap in a damp paper towel and microwave for 45 seconds.
