
Machaca Breakfast Tacos with Rajas

Serves 6
Ingredients
- 2 tbsp Extra Virgin Olive Oil
- 2 Large poblano peppers, stems removed, seeded and sliced thinly
- 1 cup White onion, thinly sliced or julienned
- 1/2 cup Bacon., diced small
- 6 Large Eggs
- 4 oz Dried Beef
- 6 Tortillas, plus more as needed
Instructions
- Place a non-stick skillet over medium-high heat. Add oil, allow to get hot then add poblanos and onions.
- Lower heat and stir-fry 15 to 20 minutes or until onions and peppers are nicely caramelized. Remove rajas to a bowl and season to taste as needed. Set aside.
- In the same pan, add bacon and cook approximately 4 to 5 minutes or until just crispy and some fat is rendered.
- Add eggs and shredded beef to bacon, scramble everything and cook until eggs are just set. Remove from heat.
- Assemble tacos by placing egg and meat mixture on warm tortillas and top with rajas. Garnish with your favorite taco condiments.
