Machaca Breakfast Tacos with Rajas

Unsaved Machaca Breakfast Tacos with Rajas

Ingredients

  • 2 tbsp Extra Virgin Olive Oil
  • 2 Large poblano peppers, stems removed, seeded and sliced thinly
  • 1 cup White onion, thinly sliced or julienned
  • 1/2 cup Bacon., diced small
  • 6 Large Eggs
  • 4 oz Dried Beef
  • 6 Tortillas, plus more as needed

Instructions

  1. Place a non-stick skillet over medium-high heat. Add oil, allow to get hot then add poblanos and onions.
  2. Lower heat and stir-fry 15 to 20 minutes or until onions and peppers are nicely caramelized. Remove rajas to a bowl and season to taste as needed. Set aside.
  3. In the same pan, add bacon and cook approximately 4 to 5 minutes or until just crispy and some fat is rendered.
  4. Add eggs and shredded beef to bacon, scramble everything and cook until eggs are just set. Remove from heat.
  5. Assemble tacos by placing egg and meat mixture on warm tortillas and top with rajas. Garnish with your favorite taco condiments.
