Unsaved Lemon Ricotta Ravioli with Browned Butter and Herbs

Ingredients

Serves 2

  • 1 each package H-E-B Ricotta Lemon Ravioli
  • 1 1/2 tbsp salted butter
  • 1/4 lb asparagus, thin stalks, washed and cut into 1 inch pieces
  • 1 tsp fresh garlic, finely minced
  • 1/4 tsp red chili flakes, (or to taste)
  • 1 tbsp shredded parmesan cheese
  • 1 tbsp fresh basil or thyme, leaves only, finely chopped

Instructions

  1. Heat water to a boil and cook pasta according to package directions.
  2. Heat a large skillet over medium-high heat. Add butter and asparagus and sauté for 2 to 3 minutes or just until butter starts to lightly brown. Add garlic and red pepper flakes and cook for 1 more minute. Remove pan from heat.
  3. Add cooked, drained ravioli to pan with butter and asparagus. Toss to coat with butter. Top with Parmesan and fresh chopped basil (or thyme, as desired). Season with salt and pepper to taste.
