
Lemon & Garlic Shrimp Pasta with Crispy Parmesan

- 12 oz Higher Harvest by H-E-B Gluten-Free Pasta
- 1/4 cup(s) extra virgin olive oil
- 1 tbsp fresh garlic, minced fine
- 1 lb jumbo shrimp peeled, deveined and tail off, fully thawed
- 2 tbsp fresh lemon juice, plus approximately 1 tsp of lemon zest
- 1/2 oz fresh basil, roughly chopped or torn
- 1/2 cup(s) Parmesan crisps, crushed or roughly chopped plus more as needed for garnish
Instructions
- Set a large pot of water over high heat and add a generous pinch of salt. Add pasta and cook according to package directions.
- Drain pasta, reserving 1/2 cup of pasta water. Set pasta aside.
- Add oil and garlic to a sauté pan and allow to get hot. Once hot, add shrimp and cook until just slightly pink.
- Stir in lemon juice and zest then add pasta and pasta water, Cook until sauce is bubbly and slightly thickened.
- Add fresh basil and crushed Parmesan crisps, toss to just coat and serve hot. Season to taste as needed with salt and pepper.
