Leek and Fennel Cornbread Stuffing

Unsaved Leek and Fennel Cornbread Stuffing

Ingredients

  • 16 oz H-E-B Cornbread Stuffing Mix
  • 2 tbsp H-E-B Select Ingredients Extra Virgin Olive Oil
  • 1 1/2 cups Leeks, root removed, white and light green part only, washed, thinly sliced
  • 1 1/2 cups Fennel bulb, core removed, washed, medium diced
  • 1 cup H-E-B Fresh Creole Seasoning Mix, in produce section
  • 1 tsp Salt
  • 1 tsp H-E-B Pure Ground Black Pepper, ground
  • 1 cup Fischer and Wieser Four Star Provisions Turkey Gravy Starter
  • 2 cups Central Market Organics Free Range Chicken Broth
  • 3 tbsp H-E-B Select Ingredients Sweet Cream Unsalted Butter

Instructions

  1. Preheat oven to 350ºF. Spray a 9x13 inch pan with non-stick spray.
  2. Add cornbread stuffing mix to a large bowl and set aside.
  3. Place a medium skillet over medium-high heat, add oil and leeks, fennel, and Creole seasoning blend. Sauté 4 to 5 minutes until vegetables begin to soften.
  4. Add salt, pepper, Turkey Gravy Starter, and chicken broth. Stir to combine, bring to a low simmer then remove from heat.
  5. Pour vegetable and broth mixture into cornbread stuffing mix and stir well to combine. Transfer to prepared pan and dot with butter on top.
  6. Bake on middle oven rack for 50 to 60 minutes. Let rest for 5 minutes prior to serving.
