Kale and Black Bean Tacos

Unsaved Kale and Black Bean Tacos

Ingredients

  • 1/4 cup Extra virgin olive oil
  • 1 tbsp Garlic cloves, minced or thinly sliced
  • 12 oz Chopped kale, 1 bag
  • 1 cup Pico de gallo
  • 15 oz No salt added black beans, 1 can drained
  • 1/4 cup Fresh lime juice
  • 6 Carb sense flour tortillas, plus as needed for tacos

Instructions

  1. In a large sauté pot with a lid, add oil and garlic, and sauté for 1 to 2 minutes or until garlic is just starting to brown, Add kale and cook until it just starts to wilt.
  2. Add pico de gallo, black beans and lime juice. Turn heat to medium low, cover with lid, and cook until liquid has fully evaporated, approximately 10 to 15 minutes.
  3. Season to taste with salt and pepper as needed and remove from heat.
