
Kale and Black Bean Tacos

- 1/4 cup(s) extra virgin olive oil
- 1 tbsp garlic cloves, minced or thinly sliced
- 12 oz chopped kale, 1 bag
- 1 cup(s) pico de gallo
- 15 oz no salt added black beans, 1 can drained
- 1/4 cup(s) fresh lime juice
- 6 each carb sense flour tortillas, plus as needed for tacos
Instructions
- In a large sauté pot with a lid, add oil and garlic, and sauté for 1 to 2 minutes or until garlic is just starting to brown, Add kale and cook until it just starts to wilt.
- Add pico de gallo, black beans and lime juice. Turn heat to medium low, cover with lid, and cook until liquid has fully evaporated, approximately 10 to 15 minutes.
- Season to taste with salt and pepper as needed and remove from heat.
