
Kakdi Koshimbir- Indian Cucumber Salad

Ingredients
- 4 cups English or seedless cucumbers, washed thoroughly, diced, skin left on
- 1/4 cup Roasted salted peanuts, ground up or chopped fine, plus more as needed
- 1/3 cup Fresh cilantro, minced fine, plus more as needed to garnish
- 2 tbsp Fresh jalapeno, minced fine, seeds removed if less heat is desired
- 1 tsp Ground cumin
- 1 tsp Curry powder
- 1/4 cup Fresh squeezed lime juice
- 1 tsp Granulated sugar
Instructions
- Place all ingredients in a bowl and toss to combine. Cover and refrigerate for at least 15 to 20 minutes.
- Season with salt and pepper before serving to keep cucumbers from leaching all their moisture while marinating.
- Garnish with more peanuts and fresh cilantro if desired.
