Unsaved Kakdi Koshimbir- Indian Cucumber Salad

Ingredients

  • 4 cups English or seedless cucumbers, washed thoroughly, diced, skin left on
  • 1/4 cup Roasted salted peanuts, ground up or chopped fine, plus more as needed
  • 1/3 cup Fresh cilantro, minced fine, plus more as needed to garnish
  • 2 tbsp Fresh jalapeno, minced fine, seeds removed if less heat is desired
  • 1 tsp Ground cumin
  • 1 tsp Curry powder
  • 1/4 cup Fresh squeezed lime juice
  • 1 tsp Granulated sugar

Instructions

  1. Place all ingredients in a bowl and toss to combine. Cover and refrigerate for at least 15 to 20 minutes.
  2. Season with salt and pepper before serving to keep cucumbers from leaching all their moisture while marinating.
  3. Garnish with more peanuts and fresh cilantro if desired.
