Jamaican Jerk Shrimp Wraps

Unsaved Jamaican Jerk Shrimp Wraps

Ingredients

  • 1 1/2 lb Raw peeled, deveined shrimp, thawed, if frozen
  • 2 tbsp Grapeseed oil, (or neutral flavored oil of choice)
  • 2 tbsp Adams Reserve Jamaican Jerk Rub
  • 1 Small serrano pepper, very, very finely chopped (or desired heat level)
  • 1 Small hothouse or seedless cucumber, peeled and diced
  • 1 cup Fresh pineapple, diced into 1/4 inch cubes
  • 1 Small red or orange bell pepper, seeded and finely diced
  • 1/2 cup Red onion, very finely diced
  • 2 tbsp Fresh lime juice, about 1 large lime
  • 2 tbsp Hot honey

Instructions

  1. Place shrimp in a bowl. Add oil, Jamaican jerk seasoning (or other all purpose seasoning of your choice) and serrano pepper. Toss to coat.
  2. Heat a large skillet over high heat. Add seasoned shrimp and stir and cook for 2 to 3 minutes or just until shrimp curl up and turn pinkish white. Remove shrimp from pan and set aside to cool while preparing rest of salad.
  3. Place cucumber, pineapple, bell pepper and onion into a medium-sized bowl. Drizzle lime juice and honey over vegetable mixture and stir to combine.
  4. When shrimp are cool, stir them through the pineapple mixture and season to taste with salt and additional Jamaican jerk seasoning.
  5. Serve in lettuce cups or on a tostada for a fresh, light snack or appetizer.
