Jalapeño Potato Sarladaise

Unsaved Jalapeño Potato Sarladaise

Ingredients

  • 1/3 cup Brown butter ghee, plus more as needed
  • 10 Peeled garlic cloves, thinly sliced or smashed
  • 1 Large jalapeño pepper, thinly sliced
  • 3 lb Yukon gold potatoes, sliced to a 1/8" to 1/4" thickness
  • 1 tsp Kosher salt, plus more as needed
  • 1 tsp Ground black pepper, plus more as needed
  • 1/2 cup Chicken stock

Instructions

  1. Place a large non-stick skillet over medium-high heat and melt ghee.
  2. Once melted, add garlic and jalapeños and sauté until garlic is just starting to brown, approximately 2 to 4 minutes.
  3. Using a slotted spoon, transfer garlic and jalapeño slices to a paper towel to drain and cool, using for garnishing or discard.
  4. Add potatoes and season liberally with salt and pepper.
  5. Cook for 5 minutes before rotating and flipping potatoes then cook an additional 5 minutes. If necessary do in batches and repeat process.
  6. Once all potatoes are cooked, return to pan and cook for 5 more minutes then add chicken stock. Cover and cook for 15 more minutes tossing occasionally to brown potatoes evenly.
  7. Transfer potatoes to a serving dish, season with salt and pepper to taste, then sprinkle on toasted garlic and jalapeños if desired.
