
Israeli Chickpea Salad with Lemon and Tahini

Ingredients
Serves 3
- 1/3 cup(s) Cold water, plus more as needed for desired consistency
- 1/4 cup(s) tahini, shake or stir well to blend
- 2 tbsp Fresh lemon juice
- 1 each peeled garlic clove, lightly crushed
- 2 tsp ground cumin, divided use, 1 tsp for dressing and 1 tsp for salad
- 1/3 cup(s) chickpeas, drained and rinsed, plus more as needed
- 1 cup(s) cucumbers, diced small
- 3/4 cup(s) roma tomato, seeds removed and tomato diced
- 1/2 cup(s) red onions, very thinly sliced or julienned
- 1/2 cup(s) radishes, rinsed well and diced small
- 1/4 cup(s) fresh mint, chopped
- 2 tbsp fresh dill, minced fine
- 1/4 cup(s) fresh parsley, chopped fine
Instructions
- In a blender combine water, tahini, lemon juice, garlic, and cumin, and blend until smooth. Season to taste and set aside or refrigerate for later use.
- In a serving bowl combine chickpeas, cucumbers, tomatoes, onions, radishes, mint, dill, parsley, and remaining cumin.
- Gently toss to combine and serve with lemon tahini dressing.
- Chef's Note: Leftover lemon tahini dressing will keep up to a week in the refrigerator.
