
Horseradish & Greek Yogurt Mashed Potatoes

Ingredients
- 2 1/2 lb Russet potatoes, peeled and cut into chunks
- 1 cup Non-fat plain Greek yogurt
- 1/3 cup Fresh chives, chopped
- 1 tsp Peeled garlic cloves, minced
- 2 tbsp Prepared horseradish, plus more as needed
- 1 tsp White pepper
- 1 tbsp Kosher salt
Instructions
- In a large pot add potatoes and cover with cold water. **(Water should be above potatoes by at least 2 inches). Bring to a simmer, and cook until they are fork tender, approximately 20 to 30 minutes.
- Once potatoes are tender, drain water and keep in same pot. Add yogurt, chives, garlic, horseradish, pepper and salt. Using a potato masher or a heavy whisk, blend everything together until it reaches desired mashed consistency. *(Add more yogurt as needed to reach desired texture and creaminess).
- Season with more pepper and salt as needed to taste, and serve.
