Unsaved Horseradish & Greek Yogurt Mashed Potatoes

Ingredients

  • 2 1/2 lb Russet potatoes, peeled and cut into chunks
  • 1 cup Non-fat plain Greek yogurt
  • 1/3 cup Fresh chives, chopped
  • 1 tsp Peeled garlic cloves, minced
  • 2 tbsp Prepared horseradish, plus more as needed
  • 1 tsp White pepper
  • 1 tbsp Kosher salt

Instructions

  1. In a large pot add potatoes and cover with cold water. **(Water should be above potatoes by at least 2 inches). Bring to a simmer, and cook until they are fork tender, approximately 20 to 30 minutes.
  2. Once potatoes are tender, drain water and keep in same pot. Add yogurt, chives, garlic, horseradish, pepper and salt. Using a potato masher or a heavy whisk, blend everything together until it reaches desired mashed consistency. *(Add more yogurt as needed to reach desired texture and creaminess).
  3. Season with more pepper and salt as needed to taste, and serve.
