Unsaved Homemade Lemon Ricotta Cookies

Ingredients

  • 15 oz Whole milk ricotta cheese, 1 container
  • 8 oz Salted butter, softened at room temp
  • 2 cups Granulated sugar
  • 2 Large eggs
  • 2 1/2 cups All purpose flour
  • 2 tbsp Corn starch
  • 6 tbsp Fresh lemon juice, plus 2 tbsp lemon zest, divided use. (1/2 juice and zest for cookie dough and half for frosting
  • 1 tsp Fine sea salt
  • 1 tsp Baking powder
  • 1 tbsp Vanilla extract
  • 1/4 tsp Almond extract
  • 2 cups Powdered sugar

Instructions

  1. Once dough has rested overnight, preheat oven to 300ºF. Line a cookie sheet with parchment paper while dough is still cold. Using a mixer with a paddle attachment, combine ricotta, butter, sugar, eggs, flour, corn starch, 3 tbsp of lemon juice, half the lemon zest, salt, baking powder, and vanilla and almond extracts.

  3. Start mixer on low speed until ingredients just start to come together, then turn mixer up to medium to medium-high speed and mix for exactly 3 minutes.
  4. Transfer dough to a bowl, cover and refrigerate for at least 12 hours or a max of 24 hours.
  5. Once dough has rested overnight, preheat oven to 300ºF. Line a cookie sheet with parchment paper. Scoop dough onto parchment paper while dough is still cold.
  6. Bake for 20 to 25 minutes or until cookies are just slightly browned around the edges, puffy and set in the middle.
  7. Cool for at least 30 minutes. While cookies are cooling, make the glaze.
  8. In a bowl, mix together powdered sugar, remaining lemon juice and zest. Mix well to combine then brush each cookie with the frosting.
  9. Brush each cookie with frosting. Allow frosting to set up before serving.
