Homemade Frites- French Fries
45 min prep
15 min cook
Ingredients
Serves 4
- 4 large russet potatoes, washed and scrubbed
- 2 qt avocado oil, plus more as needed
- 1 tbsp kosher salt, or as needed
Instructions
- Fill a large bowl with cold water. Peel potatoes, and trim at least 1/2 to 1 inch from top and bottom of each so they are even. Cut into approximately 1/4 to 1/2 inch thick long sticks.
- Place cut potatoes into cold water to keep them from oxidizing. Soak for at least 30 minutes or up to overnight.
- When ready to blanche potatoes, place oil in a large Dutch oven or heavy-bottomed pot and bring temperature to 280ºF to 290ºF. Use a candy thermometer to keep proper temps.
- Drain, rinse, and dry potatoes well before blanching potatoes in oil in batches for 6 to 8 minutes or until potatoes are just soft.
- Remove from oil and drain fries on a paper towel. Let rest for at least 30 minutes. While fries rest, heat oil up to 375ºF.
- When oil temp is reached, add par-cooked fries to oil in batches and fry for 2 to 4 minutes or until golden brown.
- Use a skimmer to thoroughly shake excess oil from fries. Place in a large bowl once cooked.
- Season fries liberally with salt and toss to coat. Serve immediately with your favorite condiments.
