Ingredients

  • 8 oz salted butter, softened at room temp
  • 1/2 cup(s) coconut oil
  • 2 cup(s) granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp fine sea salt
  • 5 large eggs, set at room temp
  • 3 cup(s) cake flour, sifted
  • 1 cup(s) sweetened shredded coconut, chopped fine
  • 1 1/2 cup(s) Toasted coconut vanilla coffee creamer, or you can substitute plain unsweetened coconut milk
  • 1 tbsp vanilla extract
  • 1 tbsp Coconut extract
  • 1/2 tsp almond extract
  • 24 oz whipped vanilla frosting, or your own homemade frosting
  • 1/2 cup(s) toasted sweetened coconut, plus more as needed to garnish

Instructions

  1. In a stand mixer using a paddle attachment, cream together butter, oil, sugar, baking powder, baking soda and salt until mixture is thick and fluffy.
  2. Scrape down sides of bowl as needed during mixing. While mixer is running, add eggs one at a time and mix until fully incorporated.
  3. Turn off mixer and add flour, coconut, creamer, and all extracts. Mix on low speed to just combine then turn up mixer and mix until batter is smooth.
  4. Pour into a greased 9 x 13 inch baking pan. Bake for 35 to 45 minutes or until cake is golden brown and a toothpick inserted in center of cake pulls out clean.
  5. Transfer cake to a cookie rack to cool for at least 40 minutes. Frost top of cake and garnish with toasted coconut flakes.
  6. Chef's Note: This cake can also be split into 2 standard round cake pans if a layered cake is preferred.
