
Homegrown Catfish PoBoy

Ingredients
Serves 4
- 8 each fried catfish strips, cooked according to package directions for air fryer
- 8 oz tartar sauce
- 1/4 cup(s) spicy pickle chips, finely chopped
- 1 tsp Louisiana Style Hot Sauce
- 3 medium Roma tomatoes, sliced 1/8th inch thick
- 4 oz Greenleaf Lettuce
- 4 each submarine sandwich rolls, split lengthwise
Instructions
- Place catfish strips in a single layer in air fryer and cook according to package directions.
- While fish cooks, combine chopped pickles, hot sauce, and tartar sauce in a medium bowl and stir until well combined. Set aside.
- Spread 1 tbsp. of the tartar sauce mixture on each side of the split submarine rolls. Lay 3 slices of tomato on the bottom side of each roll.
- When the fish is done, place 2 strips on top of the tomato slices and top with 1-2 pieces of greenleaf lettuce. Gently press to close. Serve immediately with extra tartar sauce for dipping.
