
Herb Roasted Delicata Squash and Apples

Ingredients
Serves 4
- 1 medium delicata squash, (about 1 1/2 pounds)
- 1/4 cup(s) olive oil
- 1 tsp kosher salt
- 1 tsp crushed red pepper flakes
- 2 tsp dried, rubbed sage
- 1/2 medium green apple, cored and thinly sliced
- 1/2 cup(s) sweet onion, about 1/2 of a small onion, thinly sliced
- 1 tbsp apple cider vinegar
- 1 tbsp raw honey
Instructions
- Preheat oven to 425°F. Cut the squash in half lengthwise. Use a spoon to remove seeds and soft inner section. Turn over with cut side on cutting board and cut into 1/2-inch thick slices.
- Place squash slices in a large bowl and drizzle with olive oil. Season with salt, red pepper flakes and sage. Toss to coat. Set bowl aside.
- Spread out squash in a single layer on a rimmed baking sheet and cook for 10 minutes. Remove from oven.
- Toss apples and onions in oiled bowl to soak up any remaining seasoning. Spread out apple mixture over partially cooked squash. Drizzle with vinegar and honey and toss to combine. Continue cooking for an additional 10 minutes, or until edges of squash start to turn brown.
- Chef's note: If desired garnish with finely chopped fresh sage before serving.
