Unsaved Herb Crusted Beef Tenderloin

Ingredients

  • 2 tbsp H-E-B Organics Rosemary, chopped fine
  • 1 tbsp H-E-B Organics Thyme, chopped fine
  • 1 tbsp Patty's Herbs Chives, finely chopped
  • 2 tbsp True Texas BBQ Salt & Pepper Blend, or as needed for seasoning beef
  • 4 lb Super trimmed whole beef tenderloin
  • 3 tbsp H‑E‑B Select Ingredients Grapeseed Oil, as needed for filet

Instructions

  1. In a bowl, add herbs and salt and pepper blend, mix well.
  2. Place trimmed tenderloin onto a sheet pan lined with parchment paper for easier cleanup.
  3. Season tenderloin liberally on all sides with herb salt mixture to completely coat beef.
  4. Wrap beef in plastic wrap to seal completely and refrigerate overnight or at least 8 hours.
  5. Unwrap tenderloin and let sit at room temperature for at least 30 minutes meanwhile preheat oven to 375°F.
  6. While oven is preheating, place a large cast iron skillet or any larger oven safe saute pan over medium high heat and allow to get very hot.
  7. Brush oil evenly over tenderloin and add to hot pan. Sear meat on all sides for 3 to 5 minutes or until each side is nicely crusted.
  8. Turn off stove and move pan to oven. Cook for another 20 to 25 minutes depending on meat thickness and desired doneness.
  9. Remove pan from oven once cooked to desired temperature, and allow to rest.
  10. Carve into thin slices and brush meat with any remaining pan juices. Season to taste.
