Unsaved Hatch Crab Cakes Sammy with Hatch Aioli

Ingredients

  • 3 tbsp extra virgin olive oil
  • 4 each Hatch Crab Cakes, split into half
  • 1 each hatch pepper, roasted, peeled and seeded
  • 1 each fresh garlic clove
  • 1/2 cup(s) mayonnaise
  • 1/2 cup(s) fresh cilantro
  • 4 each Hamburger buns, toasted
  • 1 cup(s) shredded cabbage

Instructions

  1. Heat 2 tablespoons of oil in a non-stick skillet over medium heat. Add in the crab cakes and cook for 5 to 6 minutes per side until heated through and crispy on each side.
  2. Combine Hatch pepper, garlic, 1 tablespoon of olive oil, mayo and cilantro into a blender or food processor, blend until smooth.
  3. Spread a generous amount of aioli on both sides of a bun, top with crab cake, shredded cabbage and add the top bun, serve hot.
