
Hasselback Potatoes

Ingredients
- 1 lb H-E-B Premium Campfire Bacon, diced small
- 2 H-E-B Peeled Garlic Cloves, minced
- 4 Large yukon Gold potatoes, scrubbed and washed
- 1 tsp Morton Coarse Kosher Salt
- 1 tsp H-E-B Black Pepper Grinder
- 3 cups Colby jack cheese, shredded
Instructions
- Preheat oven to 400°F. In a large sauté pan cook bacon and garlic together until bacon is crispy and cooked through. Drain off excess fat to a bowl for brushing over the potatoes. Drain bacon bits on a paper towel for topping.
- Cut slits into potatoes (about 1/8" to 1/4" apart) stopping just before cutting all the way through so that slices are still connected at the bottom of the potatoes. Bake in an oven safe dish for 30 minutes to soften the potatoes.
- Remove par baked potatoes from oven. Brush potatoes all over with the rendered bacon fat mixture, making sure to evenly distribute over each potato.
- Season potatoes liberally with salt and pepper and bake for an additional 30-40 minutes or until center of potatoes are fork tender and slices are crispy. Remove potatoes from oven, cover them evenly with bacon and cheese and bake for an additional 8-10 minutes or until cheese is melted.
- Season to taste with more salt and pepper as needed. Serve with any of your favorite baked potato condiments.
