1 hr prep
20 min cook
Ingredients
Serves 6
- 12 tbsp H-E-B Deli Pimento Cheese, or use jalapeño pimento cheese
- 6 large jalapeño pepper(s), halved, seeds and ribs removed
- 2 each puff pastry sheets, thawed
- 12 each Wilton Candy Eyeballs
Instructions
- Preheat oven to 400°F. Line a baking sheet with foil and coat with non-stick spray.
- Place 1 tablespoon of pimento cheese in each jalapeño half and press to fill completely. Level as much as possible.
- Cut thawed puff pastry sheet in half then cut into 1/4-inch thick strips. Work quickly so it doesn't become too sticky.
- Lay a strip of puff pastry over the pimento cheese. Gently press one end into cheese then wrap remainder of strip around the jalapeño. Repeat with 2 more strips, leaving a small gap for the eyes. Place on baking sheet and chill 10 minutes.
- Bake 20 minutes or until golden brown and jalapeños are softened. Place a pair of eyes on each pepper and let cool for 5 minutes before serving.
