
Ground Chicken and Bok Choy Stir Fry

Ingredients
Serves 4
- 1 tbsp canola oil
- 1 lb ground chicken breast
- 1 each fresh green onion(s), chopped
- 2 tsp fresh ginger root, grated
- 2 each fresh garlic clove(s), minced
- 1 lb fresh baby bok choy
- 2 tsp soy sauce
- 1 tsp sesame oil
Instructions
- Place canola oil in a large wok or sauté pan over high heat. Add ground chicken and sauté until lightly browned.
- Lower heat to medium-high and add green onion, ginger, and garlic and sauté 30 seconds.
- Stir in bok choy and 1 tablespoon water, over and cook 2 minutes until bok choy is crisp-tender.
- Add soy sauce and sesame oil and stir 30 seconds.
