Grilled Peach & Avocado Salad

Unsaved Grilled Peach & Avocado Salad

Ingredients

  • 2 Large peaches, thoroughly washed
  • 1 tbsp Shallots, minced fine
  • 1/4 cup Fresh lemon juice
  • 1 tbsp Whole grain mustard
  • 1/3 cup Extra virgin olive oil
  • 5 oz Baby spinach and kale mix
  • 1/2 cup Crumbled feta cheese, or as needed
  • 1/3 cup Honey toasted pecans, crushed
  • 1/3 cup Red onions, shaved or thinly sliced
  • 1 Large hass avocado, diced, plus more as needed

Instructions

  1. Preheat grill to medium-high heat. Cut peaches into wedges while grill is preheating.
  2. Spray hot grill liberally with non-stick spray. Grill peaches for 4 to 6 minutes or until peaches are nicely marked on all cut sides.
  3. Make vinaigrette by combining shallots, lemon juice, mustard and olive oil, whisk until just combined.
  4. Assemble salad, in a large bow.l Add spinach, feta, pecans, and red onions. add peaches and avocado to garnish top of salad.
  5. Drizzle with dressing and toss gently to combine.
