
Grilled Halibut with Spicy Papaya Chutney

Serves 4
Ingredients
- 2 tbsp Grapeseed oil
- 1 cup Shallot, thinly sliced
- 1 cup Fresno chiles or red jalapeños, thinly sliced, seeds removed if preferred
- 2 cups Strawberry or golden papaya, skin peeled, seeds removed and fruit diced
- 1 cup Apple cider vinegar
- 1/2 cup Granulates sugar
- 1/4 cup Honey
- 1 tsp Kosher salt, plus more as needed
- 1 tsp Ground black pepper, plus more as needed
- 1 tsp Ground coriander
- 1 lb Fresh halibut or any firm fleshed fish, cut into 4 equal portions
Instructions
- Set a small saucepan over medium-high heat. Add oil, shallots and chiles. Stir-fry 4 to 5 minutes, until just soft. Add papaya, stir-fry 1 minute and add vinegar, sugar and honey.
- Bring to a boil then lower heat to a simmer and cook for at least 20 to 25 minutes, until liquid has reduced and thickened.
- Using an immersion blender, pulse mixture until slightly chunky but relatively smooth. Turn off heat, season with salt and pepper, and cover.
- In a small bowl mix together salt, pepper and coriander. Liberally season fish. Spray grill well with non-stick spray. Place fish on grill at approximately a 45º angle and cook for at least 4 to 6 minutes before rotating fish another 45º.
- Cook an additional 3 to 5 minutes, flip fish and cook to an internal temperature of at least 150ºF. Remove from grill and rest 5 minutes. Serve with papaya chutney.
