
Grilled Fajita Nacho Bites

Ingredients
Serves 8
- 2 lb H‑E‑B Mi Tienda Seasoned Beef Skirt Steak for Fajitas
- 1/2 cup(s) heavy whipping cream
- 9/10 lb Meal Simple by H‑E‑B Small Tex-Mex Brisket Queso Dip
- 12 oz Central Market Totopos Tortilla Chips - White Corn & Sea Salt, or as needed
- 1/2 cup(s) fresh cilantro, chopped, as needed for garnishing
Instructions
- Preheat grill to medium-high heat or between 350ºF to 375ºF. *Preheat oven to 375F. (Brisket queso can also be made on grill if preferred).
- Once grill and oven are preheated spray grill liberally with non-stick spray. Grill fajitas until nicely caramelized on all sides and internal temp reaches at least 160ºF.
- Add 1/2 cup of heavy cream to brisket queso and place in oven. Cook according to package instructions, stirring as needed. Set aside when melted and bubbly.
- Let fajitas rest then cut thinly on the bias and set aside. To assemble bites place flatter chips on a serving tray.
- Top each with approximately 1 tbsp of brisket queso followed by thin slices of fajita meat. Repeat with additional chips and garnish with more queso and fresh cilantro.
- Chef's note: Serve with your favorite mi tienda salsas and condiments as needed.
