
Grilled Cauliflower Steaks with Creamy Pepper Parmesan Sauce

Ingredients
Serves 4
- 1 large head of cauliflower
- 1 tbsp extra virgin olive oil
- 1/2 cup(s) Peppercorn ranch dressing
- 1/4 cup(s) non-fat plain Greek yogurt
- 1/3 cup(s) fresh grated parmesan cheese
- 1 tsp kosher salt
Instructions
- Preheat oven to 400ºF and grill to 350ºF.
- Slice Cauliflower from top to stem in 1/4 to 1/2 inch slices (some pieces will be larger than others).
- Rub both sides of cauliflower with olive oil and place on a sheet pan lined with foil.
- Roast until just softened with a bit of color (about 15 minutes).
- Combine peppercorn ranch, Greek yogurt, and Parmesan cheese to form a smooth dressing. Set aside.
- Remove steaks from oven and grill about 2 - 4 minutes per side (or until both sides have good grill marks). Season to taste.
- Serve with a generous dollop of peppercorn Parmesan dressing.
