Ingredients

Serves 8

  • 3 each Thai bird chiles, minced
  • 1/4 cup(s) fish sauce
  • 3 each limes, juice of
  • 4 tbsp cane sugar
  • 1 1/2 lb green papaya, peel, seed and shred
  • 1 each red onion, slice julienne
  • 1/2 pt mixed cherry tomatoes, sliced in half
  • 1/2 each bunch of fresh basil, chopped
  • 1/2 each bunch of fresh mint, chopped
  • 3/4 cup(s) peanuts, roasted and lightly salted, place in a ziplock bag and crush lightly with a rolling pin

Instructions

  1. In a large mixing bowl, add Thai chiles, fish sauce, lime juice and sugar. Whisk until sugar has dissolved.
  2. Add papaya, onions, tomatoes and herbs to the bowl and mix until all ingredients are completely combined. Garnish with chopped peanuts and serve.
