
Green Papaya Salad

Ingredients
Serves 8
- 3 each Thai bird chiles, minced
- 1/4 cup(s) fish sauce
- 3 each limes, juice of
- 4 tbsp cane sugar
- 1 1/2 lb green papaya, peel, seed and shred
- 1 each red onion, slice julienne
- 1/2 pt mixed cherry tomatoes, sliced in half
- 1/2 each bunch of fresh basil, chopped
- 1/2 each bunch of fresh mint, chopped
- 3/4 cup(s) peanuts, roasted and lightly salted, place in a ziplock bag and crush lightly with a rolling pin
Instructions
- In a large mixing bowl, add Thai chiles, fish sauce, lime juice and sugar. Whisk until sugar has dissolved.
- Add papaya, onions, tomatoes and herbs to the bowl and mix until all ingredients are completely combined. Garnish with chopped peanuts and serve.
