Unsaved Greek Chicken Lettuce Wraps with Tzatziki

Ingredients

  • 10.6 oz Greek yogurt or cottage cheese, 2- 5.3 ounce containers
  • 1/4 cup Fresh dill, chopped fine
  • 1/4 cup Fresh mint, chopped fine
  • 1/2 cup Curly parsley, chopped
  • 1/2 cup Green onions, chopped
  • 3 cloves Garlic, lightly crushed
  • 1/2 cup Fresh squeezed lemon juice, Divided use, plus more as needed to taste
  • 2 tbsp Filtered water
  • 1 cup Seedless or English cucumber, washed and shredded on a cheese grater
  • 1/4 cup Extra virgin olive oil
  • 1 lb Shredded Dark & White Meat Rotisserie Chicken
  • 1 tsp Central Market Greek Style Spice Blend, plus more as needed
  • 1 Fresh Organic Green Butter Lettuce, 1 head of lettuce, leaves separated as needed

Instructions

  1. Make tzatziki by combining yogurt, dill, mint, parsley, green onions, garlic and 1/4 cup of lemon juice in a food processor.
  2. Pulse until smooth then transfer to a bowl. Stir in shredded cucumbers, season to taste, and refrigerate until ready to use.
  3. Set a sauté pan over medium-high heat and add oil. When oil is hot, add chicken, seasoning and remaining lemon juice. Cook for 8 to 10 minutes.
  4. Remove chicken from heat and build wraps by adding a little chicken to each butter lettuce leaf. Garnish with arugula and avocado if desired and tzatziki sauce as needed.
  5. Repeat process with each additional wrap.
