Unsaved Grapefruit and Avocado Salad with Arugula

Ingredients

  • 1 medium grapefruit
  • 1 tbsp champagne vinegar
  • 1 tbsp olive oil
  • 2 tsp shallots, very finely chopped
  • 1 tbsp fresh mint, very finely chopped
  • 1 small fennel bulb, sliced or shaved very thinly
  • 3 1/2 oz baby arugula
  • 1 large avocado, peeled, pitted and cut into thin slices

Instructions

  1. Using a micro-plane or fine grater, grate about 1 tablespoon of grapefruit zest into a small bowl.
  2. Use a sharp knife to remove the remaining peel and white pith from the grapefruit. Carefully cut toward the center in each section in between the membranes to release the sections of grapefruit gently onto a plate. Set aside. Squeeze any excess juice from membrane into the bowl with the zest and discard membrane.
  3. Add champagne vinaigrette, olive oil, shallots, mint, salt and pepper to bowl. Whisk lightly and set aside a few minutes before dressing salad.
  4. Gently toss arugula and fennel together with salad dressing and place on serving plate. Layer grapefruit slices and avocado slices on top. Drizzle a few drops of dressing over grapefruit and avocado slices.
